Hoshino Matcha Tasting - Three new matcha

A tasting of three matcha from Hoshino Seichaen, a renowned tea producer based in Hoshino, Yame, Fukuoka. The region is particularly celebrated for its production of gyokuro and matcha, and for teas distinguished by their sweetness, depth, and rich umami.

Through Haku, Hoju, and Hoshiju, we explore different expressions of matcha, moving from fresh and elegant to increasingly concentrated, deep, and complex.

Haku

A light and elegant matcha with a fresh green character. The taste is clean and balanced, with gentle umami, pleasant sweetness, and a soft, rounded finish. An approachable matcha in which freshness and finesse are clearly expressed.

Hoju

A fuller and more intense matcha, with greater depth and more pronounced umami. The texture is smooth and creamy, while sweetness, vegetal freshness, and a subtle bitterness create a harmonious balance. A matcha combining concentration with elegance.

Hoshiju

The most refined and complex of the three. Hoshiju offers deep umami, pronounced natural sweetness, and a rich, silky texture. The flavour develops gradually on the palate, revealing green, sweet, and delicately vegetal nuances, followed by a long and harmonious finish.

This tasting offers an opportunity to explore how quality, balance, texture, and intensity are expressed in matcha, and how subtle differences can create distinctly different tasting experiences.
