Matcha - essentially powdered green tea made from tencha, specially cultivated tea leaves that are shaded before harvest. After picking, the leaves are steamed, dried and carefully ground into a fine powder. Matcha is whisked with water directly in the bowl, meaning the entire leaf is consumed.
