Matcha Yamabuki is a premium Japanese matcha, produced by Hoshino-Seichaen a family-run company located in Hoshino, Yame, Fukuoka. The area is famous for its production of high quality tea with rich umami and deep flavor notes.

Matcha Yamabuki is perfect for matcha latte (don't forget iced matcha latte), ice cream, desserts or in cold drinks like mock/cocktails. It can also be whipped like a traditional matcha with 80 degree hot water.

Producing matcha is a difficult process, where entire fields are covered so that the bushes and fine tea leaves are not exposed to direct sunlight. After the leaves have been picked, they are processed through several stages, the last stage of which is to grind the leaves into a very fine powder. This matcha is produced by a top Japanese tea producer.

Preparation

Instructions for Matcha Latte:

Vessel: Bowl
Quantity: 3-4g (3 chasaku spoons) for 50ml water + 150ml milk
Temperature: 80°C
Time: Whisk with chasen for 30-45 seconds

Steps:

1. Heat milk, if you don't have a milk foamer heat in a pan on the stove on a gentle heat.
2. Sift the matcha through a sieve into a bowl to remove any clumps.
3. Pour a little hot water into the bowl.
4. Use the bamboo chasen whisk the matcha until a smooth foam is on the surface.
5. Add milk to the matcha in the bowl and give it a quick stir.
6. Garnish the foamy top with some grated chocolate.

Iced Matcha Latte:

1. Prepare matcha with hot water follow steps 2-4 from above.
2. Prepare a glass with ice and milk and we recommend a little syrup of iced lattes.
3. Pour matcha in the glass.
4. Top tip: For a beautiful presentation, when pouring aim the matcha onto the ice cubes as this will make the matcha part float on top of the milk. This is easier to do if you have a pouring bowl.
