Matcha Ajisai is a high-quality culinary Matcha. It is made from the summer harvest of the Yabukita variety and is ground into a powder in a ball mill. With a distinct green colour, it is a perfect ingredient for matcha lattes, ice cream, desserts or in cold drinks such as mocktails/cocktails.

The flavour profile is nuts, grass and kelp/seaweed it is slightly astringent with a good umami in the body.

About the tea farmer
Akihiro »Akky« Kita is the president and head farmer of Obubu. His desire to make tea accessible to the general public is the foundation of Kyoto Obubu Tea Farms. When Akky was in college, he took a part-time job as a farmhand in Wazuka and fell in love with the tea from this region. He decided to drop out of college and devote his time to learning the art of tea growing. Recognizing the need for independent farmers like himself to spread the joy of drinking Japanese tea, he travels every winter to bring Japanese tea to people all over the world.

Preparation

Instructions for Matcha Latte:

Vessel: Bowl
Quantity: 3-4g (3 chasaku spoons) for 50ml water + 150ml milk
Temperature: 80°C 
Time: Whisk with chasen for 30-45 seconds

Steps:

1. Heat milk, if you don't have a milk foamer heat in a pan on the stove on a gentle heat.
2. Sift the matcha through a sieve into a bowl to remove any clumps.
3. Pour a little hot water into the bowl.
4. Use the bamboo chasen whisk the matcha until a smooth foam is on the surface.
5. Add milk to the matcha in the bowl and give it a quick stir.
6. Garnish the foamy top with some grated chocolate.

Iced Matcha Latte:

1. Prepare matcha with hot water follow steps 2-4 from above.
2. Prepare a glass with ice and milk and we recommend a little syrup of iced lattes.
3. Pour matcha in the glass.
4. Top tip: For a beautiful presentation, when pouring aim the matcha onto the ice cubes as this will make the matcha part float on top of the milk. This is easier to do if you have a pouring bowl.
