When enjoying matcha tea, whether it is the ceremonial method or matcha latte, the quality of the matcha is of great importance.
The production of matcha tea is a very difficult process that requires precision, including shadow growing of the tea as well as the right picking time.
There are actually only a few producers in Japan who have the right facilities and know-how to grow and produce matcha tea, so that it achieves the desired fullness, sweetness and umami.
Matcha Himawari is a high quality matcha made by tea producers Hiraoka. It“s perfect for matcha latte, cold or warm, ice cream, desserts or in cold drinks like mock/cocktails.

Ā Another important detail when enjoying matcha tea is the airy texture that is produced when the tea is whipped with a bamboo whisk, in Japanese a Ā chasen.Ā The whisk simply needs to be rinsed after use and stored in the ceramic holder, a naoshi . The ceramic holder is an important detail, as it helps the whisk to keep its shape and thus have a long shelf life.

The matcha latte package comes with a manual on how to make a wonderful matcha latte.

Preparation

Instructions for Matcha Latte:

Vessel: Bowl
Quantity: 3-4g (3 chasaku spoons) for 50ml water + 150ml milk
Temperature: 80°C 
Time: Whisk with chasen for 30-45 seconds

Steps:

1. Heat milk, if you don't have a milk foamer heat in a pan on the stove on a gentle heat.
2. Sift the matcha through a sieve into a bowl to remove any clumps.
3. Pour a little hot water into the bowl.
4. Use the bamboo chasen whisk the matcha until a smooth foam is on the surface.
5. Add milk to the matcha in the bowl and give it a quick stir.
6. Garnish the foamy top with some grated chocolate.

Iced Matcha Latte:

1. Prepare matcha with hot water follow steps 2-4 from above.
2. Prepare a glass with ice and milk and we recommend a little syrup of iced lattes.
3. Pour matcha in the glass.
4. Top tip: For a beautiful presentation, when pouring aim the matcha onto the ice cubes as this will make the matcha part float on top of the milk. This is easier to do if you have a pouring bowl.
