Pan yong tea is grown at an altitude of 1200 m on hillsides in Fujian province in China. Tea has been cultivated here for 1700 years, as the weather conditions are optimal for tea cultivation, with moist soil, rich in hours of sunshine and mist. However, the impassable terrain has presented some challenges over the years, which is why monkeys have been used to help with the picking, hence the name. However, Pan yong is a relatively new type, which is picked in the spring.
It consists of lightening the shoots and leaves, which contributes to the golden taste, with notes of honey in the aftertaste.
An exceptionally beautiful and elegant tea .

Preparation

Pan yong is brewed in a preheated pot.

The water must not boil for a long time, as you boil the oxygen out of the water.

Use 1 tsp. tea per cup.

The leaves are poured with 95 degree hot water.

Infusion time: 5-6 minutes.

Since the tea leaves give the best result by floating freely, can you possibly use a spacious strainer in the preheated teapot, or pour Pan Yong tea over a preheated teapot.

Tips.

If you only brew one cup / glass at a time, you can use a kopsi or "fill-yourself" teabags, where the leaves can float freely and thereby give off the fine aroma.
