This Organic Sencha comes from the southern tip of Kagoshima in Japan.

Kagoshima in southern Japan is known for their tea production and especially the production of organic tea in which they are the leader. Here the soil is mineral and the active volcano Sakurajima, has a strong impact on the surrounding nature.

Organic Sencha Orita is from the tea producer Oritaen and the carefully selected tea leaves are from the first harvest of the year where the best leaves can be found. The tea is a mixture of two tea cultivars, Okumidori and Kanayamidori, this helps to give the tea a rich taste with good umami and more complexity that brings to mind baby cabbage, seaweed and asparagus.

Preparation

Sencha comes in many varieties, but producing quality sencha is a finer job.

The leaves are steamed and dried in several stages , which produces the sweet round seaweed taste. Finally, the leaves are sorted by hand, where twigs and coarse leaves are removed. What characterizes a fine quality sencha is a dark green fine leaf.

Preparation of Grøn Sencha Limited

Sencha Limited is brewed in a small preheated jug.
The water must not boil for a long time, as you boil the oxygen out of the water.
Use 1 tsp. tea with top per cup.
The leaves are poured over with 75 - 80 degree warm water and you get the finest taste if the leaves float freely in a spacious strainer or freely in a small jug.

Infusion time:

1st brew: 1 min and 30 sec.
2nd brew: approx. 40 sec.
The leaves can be used 2 – 3 times.
