Oyatoko is the raw material of hojicha, which is harvested together with the leaves (parents) that are full of nutrients from the previous year and the new shoots (children) that have grown from them. Please enjoy the scent and taste of hojicha.

The have a soft and round taste, and the roasting adds a nutty taste.

Hojicha is a very popular food tea in Japan, as it is both sweet and mouth-watering. It's a really nice autumn tea to cozy up to.

Horii Shichimeien, founded in 1879, still manage the 600-year-old Okunuoyama Tea Garden in Uji, Kyoto. This garden is the only survivor of 7 historic tea gardens in Kyoto.

Preparation

Eastern style brewing:

Vessel: A small tea pot or houhin, ranging from 100ml - 350ml in volume
Quantity: 1g for every 30ml of water
Temperature: 90°C
1st brew: 30 seconds 
2nd brew: 15 seconds
3rd brew: 90 seconds (or as long as you feel like) 

Western style brewing:

Vessel: A teapot from 450ml - 950ml
Quantity: 1g for every 150ml of water
Temperature 90°C
Time: 3-5 mins

Cold brew:

Vessel: Hario cold brew bottle (750ml) or a glass jug
Quantity: 1g for every 100ml of water
Instructions: Add tea to your chosen vessel then fill up with cold water. Put it in the fridge and brew for a minimum of 4 hours. We recommend to drink the infusion within 36 hours.
Advanced brewing tip: Hojicha is a roasted green tea that can consist of: only stems, only leaf or a combination of stems and leaves. If the Hojicha is just stems then the cold brew extraction will be weak so we recommend adding 1/4 of the jug with hot water for 45-60 seconds before filling the rest with cold water and letting it infuse as usual.
